Kike Casarrubias

I am the grandson of a butcher, and I grew up surrounded by ingredients, flavors, and a deep respect for cooking. I trained in both Mexico and France, honing my craft in some of the most demanding kitchens in European haute cuisine. That journey is what gives meaning to my cooking today. At OXTE, my cuisine reflects everything I’ve experienced: a precise, contemporary approach that is deeply connected to my roots. I work with Mexican ingredients using French techniques, always seeking a balance between identity, elegance, and emotion.

My cooking is born of memory. I grew up surrounded by flavors, aromas, and culinary traditions that shaped my understanding of gastronomy from a very early age. These memories—the ingredients, the recipes, and the shared moments—remain at the heart of everything I do today. At OXTE, every dish begins there and is reimagined through a contemporary lens. I don’t seek to replicate the past, but to engage with it. My approach to cooking always seeks balance, respecting the ingredients and embracing simplicity, knowing that this is where everything comes together.
